Beef or Chicken Garlic Stir Fry

Ingredients

2 tbsp oil

1lb boneless beef sirloin or inside round steak, but in strips

or

1lb of boneless chicken breast cut into strips

1 onion, sliced thinly

2 cloves of garlic minced or ¼ tsp garlic powder

1-10oz can of beef broth/consommé

or

1-10oz of chicken broth/consommé

1-2 tbsp soya sauce

2 tbsp cornstarch shaken in ¼ cup cold water

3 cups frozen Oriental vegetable mixture

Directions

Cut up meat, heat oil at medium-high in a large skillet. Add meat and stir fry until browned. Drain fat. Reduce heat to medium.

Add onion and garlic, stir fry 3 minutes.

Stir in consommé, soya sauce. Heat to a boil, stirring often. Reduce heat to medium-low.

Add vegetables and simmer until meat and vegetables are cooked through, about 5 minutes, stirring occasionally.

Then shake up or stir cornstarch in cold water and add the mixture to the pan.  This will thicken the sauce so just keep stirring for a couple more minutes.

Serve over hot rice.

Rice

1 cup of basmati rice, rinsed (or whatever kind you like)

2 cups warm water

½ tsp salt

½ tsp oil

Cook on medium-low heat for 17-20 minutes and then fluff with a fork

ENJOY!
