Roasted Vegetables & Meatballs

Meatballs

Amounts are listed for:

1lb lean or medium ground beef    2lb         4lb

1 egg(s), large or extra-large           2            4    

½ cup finely chopped onion            1 cup     2 cups

½ cup oatmeal or breadcrumbs    1 cup     2 cups

½ tsp salt                                          1 tsp      2 tsp

½ tsp ground pepper                        1 tsp      2 tsp

1 tbsp Worcestershire sauce           2 tbsp   4 tbsp= 1/4c

Directions

Combine ingredients in a bowl and mix. I use my stand mixer and often mix 4lbs and freeze the extra meatballs for future use. Roll into balls, approximately the size of a walnut and place on large cookie sheet.

Bake in 500-degreeF oven for 12-16 minutes or until browned. Partway through the cooking (10 minutes) roll the meat balls around on the cookie sheet.

I would suggest that you make extra meatballs so that they are ready for next week’s meal.

Vegetables

1lb meatballs                            2lbs                     

6 cups of vegetables:                12 cups of vegetables

Sweet potatoes

Potato wedges

Onions

Carrots

Turnip

1 sweet pepper                         2 sweet peppers

8 cloves of garlic, cut in half     16 cloves

Directions

Cut vegetables up into roasting size chunks, place in large bowl. Reserve cut up pepper in separate bowl.

In another bowl mix:

1 tbsp olive oil                           2 tbsp   

1- 1/2 tsp of rosemary              1 tbsp

1 tsp salt                                    2 tsp     

½ tsp pepper                            1 tsp pepper

Seasoning is a personal choice. So, you can add more if you like.

Directions

Pour over the vegetables and mix.

Place on a large cookie sheet or in a large roaster and bake at 400 for 35-40 minutes.

Then stir in meatballs and 1 or 2 red peppers cut into strips.

Then continue roasting for 20-25 minutes longer.

This recipe makes a good quantity and great leftovers or intentionals as we call cooking extra in our house, it freezes very well and can be reheated from frozen in about 20 minutes or reheated in the microwave too.

The meatballs can be substituted with sausages or chunks of chicken. 

The instructions would be to cut up sausages or chicken breasts into 1-1/2 inch chunks and put everything but the sweet peppers together and roast for 35-40 minutes then add sweet peppers and roast for 20-25 more minutes.
