One Pan Pasta & Sauce

In a very large pan place:

1 medium onion, sliced thin

1 chili pepper, sliced fine or ½ -1 tsp red pepper flakes

2 pints of cherry tomatoes, cut in half

or 4-5 plum tomatoes, cut in cubes

large handful of spinach

3 large garlic cloves, diced

1 red or orange pepper, sliced thin

7 oz or 200g of raw spaghetti noodles in the center of the pan

Pour in 2 1/3 – 2 1/2 cups of water or vegetable broth

Add: 1 tbsp olive oil

Generous grinding of black pepper and sea salt

Turn heat on to medium. Gently stir pasta so it does not stick together.

Keep stirring until pasta is cooked andante and vegetables are softened. It takes 10-12 minutes. Just add a little more liquid if you like more sauce.

Take off the burner and stir in some parmesan cheese.

Add meatballs (optional), heated in the microwave.

Plate and add more parmesan cheese and serve. Enjoy!
